Ratafia de Champagne: the tradition

Ratafia de Champagne is a specialty of our region, made from grape juice whose alcoholic fermentation is stopped by the addition of alcohol (champagne marc, fine de champagne, eau-de-vie). This process allows all the aromas and natural sugar of the grape to be preserved, offering an alcohol at 18°C ​​that respects the Champagne appellation.

Tasting

Ratafia de Champagne is ideal as an aperitif, pairing perfectly with blue cheese and foie gras. As a dessert, it goes well with melon and enriches many cooking recipes. At the end of a meal, it can also be enjoyed as a pleasant digestif.

The winemaker's aperitif

Traditionally served in a Blida glass, appreciated for its resistance, Ratafia de Champagne is a drink highly prized by grape harvesters, just as much as Champagne.
